Chicken Kabab Recipe
Ingredients:
For the Marinade:
- 1 lb (450 g) boneless chicken (thighs or breasts), cut into cubes
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon paprika or chili powder (adjust to taste)
- Salt and pepper to taste
- Optional: 1 teaspoon garam masala
For Skewering:
- Bell peppers, cut into chunks
- Onion, cut into chunks
- Cherry tomatoes (optional)
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
Instructions:
Marinate the Chicken:
- In a large bowl, combine yogurt, lemon juice, vegetable oil, minced garlic, grated ginger, cumin, coriander, paprika, salt, and pepper. Mix well.
- Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight for more flavor.
Prepare the Skewers:
- Preheat your grill or oven to medium-high heat.
- Thread the marinated chicken onto skewers, alternating with pieces of bell pepper, onion, and cherry tomatoes if using.
Grill the Kababs:
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
Serve:
- Remove from the grill and let them rest for a few minutes. Serve with naan or rice, and your favorite chutney or sauce. Garnish with fresh cilantro and lemon wedges.
